Two Meals in the Backcountry

We love eating fresh in the backcountry (though we always supplement with Mountain House). And we love eating Mexican food. Here are two recipes we make regularly using Sea to Summit cookware. Mexican Veggie Bowl


Serves 2

Ingredients:
1/2 can black beans
1 small onion
3 small peppers
1/2 zucchini, sliced
2 tbs olive oil
1/2 tsp chili powder
1/4 tsp paprika
1 cup quick-cooking rice

Shishito Pepper Black Bean Tacos

Serves 2

Ingredients:
1-2 cups peppers
1-2 tbsp oil
1/2 cup refried beans
2 ounces salsa verde
2 lines
2 corn tortillas
