Mexican Veggie Bowl
Serves 2
Ingredients:
1/2 can black beans
1 small onion
3 small peppers
1/2 zucchini, sliced
2 tbs olive oil
1/2 tsp chili powder
1/4 tsp paprika
1 cup quick-cooking rice

2 ounces salsa verde
